I thought I would start out this blog with one of my very favorite recipes of all time!!
Chocolate Tofu Pudding!!!!
What’s that, you say??? How in the world can these two polar opposites, CHOCOLATE AND TOFU, possibly taste good together???!!! It’s impossible, it’s disgusting, it’s inhumane!!! And not to mention the fact that these words are also stringed together with one of the most delicious desserts on the planet—pudding!!!
Now that’s just wrong….
Ah, not so my friends not so. I promise you won’t hate this recipe! Taste and be amazed!
Chocolate Tofu Pudding
3-6 oz silken tofu (or two slabs cut off of one whole block)
1 TB Cocoa Powder
1 Cup Almond Milk, or soy milk
1/2 scoop Protein Powder (I use Life Basics Plant Protein in Chocolate)
Stevia to taste
Blend it all together in a blender, or use a hand blender until thick and creamy. Pour on top of cereal, drink straight up, or freeze it for an hour or 2 until it’s more like a rich ice cream.
I eat this pretty much once a day, sometimes twice if I’m feeling particularly indulgent. It’s sweet but not too sweet and can be modified any way you want. Sometimes I like to add a TB of peanut butter, or a dash of instant coffee just to mix it up!
Brekkie!!! In the bowl–Chocolate Tofu Pudding with Barbara’s Shredded Biscuits, and flax seed. On the plate–apple and carrots with peanut butter.
